vegetable sti-fry with peanut sauce


Ingredients:
Mixed vegetables (e.g., bell peppers, broccoli, carrots): 2 cups (chopped)
Garlic: 2 cloves (minced)
Soy sauce: 2 tablespoons
Peanut butter: 2 tablespoons (smooth)
Water: 2 tablespoons
Vegetable oil: 1 tablespoon
Optional: Chili flakes (1/2 teaspoon for heat)
Cooked rice or noodles: 2 cups (for serving)


Method:-----------
Heat oil: In a large pan, heat oil over medium-high heat.
Cook veggies: Add garlic and stir for 30 seconds. Add vegetables and stir-fry for 5-7 minutes until tender-crisp.
Make sauce: In a small bowl, mix peanut butter, soy sauce, water, and chili flakes (if using) until smooth. Pour over vegetables.
Combine: Stir for 1-2 minutes until veggies are coated and sauce thickens slightly.
Serve: Serve hot over rice or noodles.
Tips:------
Use any veggies you have on hand.
Add tofu or chicken for protein (cook separately and mix in).
