π Ingredients
For Paneer Marination--------
Paneer – 250g, cubes me kata hua
Dahi – 2 tbsp
Kashmiri Lal Mirch Powder – ½ tsp
Haldi – ¼ tsp
Salt – 1 pinch
Oil – 1 tsp
For Gravy
Makhan (Butter) – 2 tbsp
Oil – 1 tbsp
Pyaz – 2 medium, roughly chopped
Tamatar – 3 medium, roughly chopped
Kaju – 10 pieces (15 min garam paani me bhige hue)
Adrak – 1 inch piece
Lahsun – 4 cloves
Kashmiri Lal Mirch Powder – 1 tsp
Dhaniya Powder – 1 tsp
Garam Masala – ½ tsp
Kasuri Methi – 1 tsp (hath se malkar)
Fresh Cream – 3 tbsp
Salt – swad anusar
Paani – 1 cup (ya consistency ke hisab se)
π©π³ Method
Step 1 – Paneer Marination
1. Ek bowl me dahi, lal mirch, haldi, namak aur oil milaiye.
2. Paneer cubes dal kar 10–15 min ke liye aside rakhiye.
Step 2 – Base Preparation
1. Ek pan me oil garam karke pyaz, adrak, lahsun ko medium flame par 5–6 min tak halka golden hone tak bhune.
2. Tamatar dal kar 5–6 min cook karein jab tak soft ho jaye aur oil alag dikhne lage.
3. Gas band karke mixture thoda thanda hone dein, phir kaju ke saath blender me smooth paste bana lijiye.
π‘ Tip: Blending ke time thoda garam paani add karein taki paste bilkul smooth bane.
Step 3 – Secret Flavor Lift
Butter ko halki aag par melt karke usme kasuri methi 10 sec tak sizzle karein. Ye step gravy me deep aroma deta hai
Step 4 – Gravy Cooking
1. Butter + kasuri methi ka mixture pan me rakhiye.
2. Kashmiri lal mirch powder dal kar 5 sec bhune (jalne na dein).
3. Onion-tomato-cashew paste dal kar 3–4 min roast karein.
4. Dhaniya powder, garam masala aur namak dal dein.
5. 1 cup paani dal kar halki aanch par 5 min simmer karein.
Step 5 – Paneer Add & Finish
1. Marinated paneer cubes gravy me dal kar 3 min cook karein.
2. Gas band karke fresh cream dalen aur gently mix karein (cream curdle na ho).
π‘ Tips
Paneer ko fry na karein, sirf marinate karke add karein — isse soft rahega.
Rich taste ke liye cream quantity badha sakte hain.
Natural red gravy ke liye Kashmiri mirch use karein.
